Easy Sweet And Sour Shrimp Recipe


Do you love Chinese take-out? It really hits the spot sometimes! This recipe is for sweet and sour shrimp. It features Jasmine rice served with SeaPak Jumbo Butterfly Shrimp tossed in a homemade sweet and sour sauce which will include chunks of pineapple, red pepper, and onions. Sweet And Sour Shrimp

I came up with this dish because it has that familiar flavor of sweet and tangy sauce and it is poured over perfectly fried, crunchy shrimp. And here’s the best part- you don’t have to do the frying! SeaPak is all about ease, convenience, and taste so you can just grab a box of their Jumbo Butterfly Shrimp in the frozen section of your grocery store and they have already perfectly breaded and fried the shrimp for you. Then you just whip up this homemade sweet and sour sauce and toss them all together. Yum!

Ingredients:

  • 1 package SeaPak Jumbo Butterfly Shrimp
  • 1 tablespoon of extra virgin olive oil
  • 1 red bell pepper, stem and seeds removed, cut into large chunks
  • 1/2 small onion, peeled, cut into large chunks
  • one 8 oz. can of pineapple chunks (about 1 cup of loosely packed chunks)
  • 1 bottle of sweet and sour stir fry sauce or homemade using ingredients listed below:
  • 3 tablespoons canned pineapple juice (use the juice that the pineapple chunks came in)
  • 3 tablespoons rice vinegar (you may substitute apple cider vinegar)
  • 2 teaspoons soy sauce
  • 3 tablespoons ketchup (or tomato paste)
  • 2 tablespoons packed light brown sugar
  • 2 teaspoons corn starch dissolved in 2 tablespoon water (this is called a cornstarch slurry)

I suggest serving this sweet and sour shrimp dish with Jasmine rice. If you’d like to do that, you will need 1 cup of Jasmine rice which you should cook according to the rice brand’s directions.

You may substitute yellow or green bell peppers for the red pepper if you prefer. If you enjoy garnish, sprinkle with slices of green onions.

You can certainly use store bought sweet and sour sauce from the Asian section of your grocer and it will be even faster and easier. I suggest you go for the homemade sauce though if you have an extra 5 minutes because it just tastes so good! The corn starch is used as a thickener. A nice think sauce sits on the exterior of the crispy shrimp and doesn’t soak in or make them soggy. If you like your sauce thinner, just add a bit more pineapple juice.

How To Make Sweet And Sour Shrimp

If serving with white rice, go ahead and set that on to cook according to the package instructions.

Next, prepare the  SeaPak Jumbo Butterfly Shrimp according to the instructions on the box. I like to place mine in the oven so they take 14 minutes to bake at 425 degrees F.

Then, in a large skillet over medium heat, add olive oil. Next, add the onion and pepper chunks and saute for about 5 minutes stirring every minute or so. Add pineapple chunks. Next, turn the stovetop up to medium-high heat, and add pineapple juice, vinegar, soy sauce, ketchup, and brown sugar. Bring to a boil. Stir in the cornstarch mixture and simmer for another minute until thickened, stirring constantly. Remove from heat.

When your shrimp are done baking, you can remove them from the oven. Go ahead and serve the rice. If you like it shaped, just press it into a glass ramekin and flip it over onto the plate. Toss the shrimp into the pan with the sweet and sour sauce and serve.

That is it! So easy and so delicious!
